Gramma's Tapioca Pudding



This is a recipe that I had to watch my mother in law make a few times before I got it right. She never wrote anything down as she couldn't write English very well and learnt to read English when she was 46 and my hubby started school. He was the baby of the family of six. She watched her mother make it. My mother in law died when she was 89 in 1985. What a wonderful lady she was and there was never one cross word spoken between us. She was more like a grandmother to me than a MIL.

Tapioca Pudding.
Soak 1 cup of large Pearl Tapioca in water overnight.
Put in the top of a double boiler or a slow cooker.
Add 2 cups of milk. Cook until almost thick (color will be clearer not white) and add about 1/4 cup water.
In a bowl mixed 2 eggs with 3/4 cup sugar and a pinch of salt.
Add some of the hot milk and stir until no strings.
Add egg mixture to Tapioca and cook until thick.
At the end add 1 teaspoon of butter and 3/4 teaspoon of vanilla.

This is best the day it is cooked but can reheat in the microwave adding a little milk to the pudding as it gets really thick.

She looks so young in that photo. I have never loved tapioca pudding, but my husband does.

I am crazy about tapioca pudding but have never made it from quite that basic a recipe. I always had some mixes to help me speed things up. Sure sounds good with your old family recipe.

In the picture MIL was probably only about 20 years of age.
She was a real pretty woman in her younger years.
